This week as part of ED’s Foodies campaign we have with us the superbly talented Chef Aditya Bal!

Okay my female friends, enough drooling, already!

So without making you wait any further let’s see what he had to share with us (and of course you, my dear readers)!


Team ED: When was the eureka moment when you realised you wanted to be a chef and not a model?

Aditya Bal: I realised it when I had been cooking for a couple of months and was loving the process. I decided to make cooking my way of life and career. This was in 2009.


Team ED: What is your signature dish?

Aditya Bal: One of my favourites is a my Fillet of Snapper Papillote with mango and tender coconut.

Team ED: A culinary trend you wish should die a slow and painful death?
Aditya Bal: Not a great fan of Indian Chinese honestly!

Team ED: Best tip that you would like to give to young home cooks?

Aditya Bal: Enjoy the process and learn basic fundamentals like cooking techniques and knowing about your produce.


Team ED: Which is the most unusual (weird) dish that you have ever eaten?
Aditya Bal: Turtle curry cooked in China.

Team ED: What is the best and the worst part of your work?
Aditya Bal: Best part is good food to eat and serve most of the time..and great variety too. Bad part is the sheer physical work required, long hours and almost no holidays.

Team ED: What can we find in your browser history?

Aditya Bal: Recipe sites, cooking sites and history documentaries on YouTube.


Team ED: Who are your closest friends from the food industry?
Aditya Bal: I would say Chef Shilarna Vaze of Gaia Home Chef and Chef Vicky Ratnani.

Team ED: What is the craziest thing you’ve ever done?

Aditya Bal: Taken a whole year off to travel.
